BEETROOT AND FETA SALAD
Serves 4 - 6
This is one of my favourite salads and takes next to no time to make. It’s a beautiful blend of sweet and sour with some delicious greens and creamy feta. The beetroot provides a generous sweet flavour and the lemon dressing and feta cheese add that tang. This is delicious served with marinaded chicken thigh fillet or lamb chops.
For this recipe, you’ll need a chefs knife, chopping board, salad servers, and a salad bowl.
250g pre packed whole beetroot
50g feta cheese
100g mixed salad leaves
50g alfalfa sprouts (about a 1/2 cup
Juice from 1 lemon
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper
Step 1: Wash all of your salad ingredients.
Step 2: Add salad leaves to the salad bowl along with alfalfa sprouts.
Step 4: Dice the beetroot and sprinkle evenly over the greens in your salad bowl.
Step 5: Use your fingers to crumble over the feta.
Step 6: Squeeze lemon juice over the salad and pour over the olive oil and balsamic vinegar.
Step 7: Season with salt and pepper.
Step 8: Toss with salad servers to combine.
