To make this marinade work fresh ingredients are best; however, you may like to substitute fresh mango with frozen.
If you’re using fresh ingredients, the marinade can also go well as a salad dressing or even as a salsa for your favourite Mexican dish.
For this recipe you’ll need a chefs knife, measuring cups and spoons, a chopping board, and a food processor.
1 red chilli
1/4 cup coriander leaves
1/2 red onion
1 tablespoon extra virgin olive oil
1 teaspoon smoked paprika
Salt and pepper
Step 1) Remove all of the mango flesh, discarding the skin and pip and transfer to a blender.
Step 2) Remove the skin from the onion, halve and transfer to the blender with your mango. Either discard the remaining half or store in the fridge for later use.
Step 3) Add all other ingredients plus a drizzle of extra virgin olive oil. Squeeze in the juice from the lime.
Step 4) Blend all ingredients into a smooth paste and transfer to a jar or airtight container. Store in the fridge for up to one week.
